Ingredients

Orange, fennel & pomegranate salad
4 Juicy Naval Oranges
2 Small Fennel Bulbs
3 Tbsp Fresh Pomegranate Arils
1 Tbsp Mint Chopped, or whole is small
Dressing
1 Lemon Juice Only
1 Tbsp Aromatic Honey
1 tsp Orange Flower Water Zest of 1 Orange
2 Tbsp Extra Virgin Olive Oil
1/2 tsp Salt
Ham, mozzarella & tomato salad
2 Cups Red Leafy Lettuce
1 Cup Peas Fresh or Frozen
1 Cup Baby or Cherry Tomatoes
6 Slices Ham Thinly Sliced
1 Ball Mozarella Cheese
1/2 Cup Fresh Mint Leaves Some Sliced Finely
Dressing
1 Tbsp Red Wine Vinegar
3 Tbsp Extra Virgin Olive Oil
1 tsp Dijon Mustard
Pinch of Sugar
Salt and Pepper

Orange, fennel & pomegranate salad

Peel the oranges with a sharp knife, taking care to remove all traces of the white pith. Slice the oranges horizontally into 6 or 7 slices. Place these on an attractive serving plate.

Slice the fennel bulbs as thinly as possible and scatter the slices over the oranges.

Scatter the pomegranate arils over the orange and fennel slices. To make the dressing, combine the ingredients and mix well so the honey dissolves and everything is mixed together.

Pour the dressing over the salad and scatter the mint to garnish.

Ham, mozzarella & tomato salad

Separate the lettuce leaves, wash well and dry with a tea towel or in a salad spinner.

Briefly blanch the peas in boiling water and cool immediately in cold water.

Wash the tomatoes and cut each into two.

Lay the lettuce leaves on a salad platter or shallow bowl. Roll the ham slices up and nestle them into the lettuce with the tomatoes.

Break the mozzarella into pieces with your hands and add these pieces to the salad. Scatter over the peas and the mint.

Mix the vinegar, oil, mustard, sugar, and salt and pepper together so they are well combined and pour over the salad.
