Ingredients

4 Pork Sirloin Steaks
2/3 Cup Sweet Apple Cider
1/4 Cup Apple Cider Vinegar
3 Tsp Brown Sugar
1 Tsp Whole Grain Mustard
2 Tsp Peanut Oil
200g Quinoa, Cooked
100g Brown Rice, Cooked
2 Garlic Cloves, Sliced
1 Carrot, Finely Diced
2 Celery Sticks, Sliced
1/3 Cup Oyster Sauce
2 Spring Onions
1/2 Bunch Coriander

Start by heating half the oil in a large frying pan over medium-high heat. Cook the pork for 3 mins each side or until golden. Remove.

Reduce heat to medium heat. Add the cider, vinegar, sugar and mustard to the same pan and cook, stirring, for 5 mins or until thickened slightly. Return the pork to the pan and cook for 2 mins or until cooked through.

Meanwhile, heat some peanut oil in a wok, cook the garlic and vegetable for 5 mins or until almost tender. Add the quinoa, brown rice and oyster sauce and cook, stirring, for 2 mins or until heated through. Finish with spring onion and coriander.

Divide the quinoa fried rice among serving plates. Top with slice pork and serve.
