Ingredients

Loaf ingredients:
115g salted butter* (or unsalted and add ¼ tsp salt)
90g white sugar
2 eggs (medium, size 6)
1 ½ tsp vanilla essence
190g plain flour
1 ¾ tsp baking powder
½ tsp ground cinnamon
½ cup milk
Apple Mixture
1 large apple, peeled and chopped into pieces
50g brown sugar
1 tsp ground cinnamon
1/4 teaspoon ground nutmeg
Cinnamon Sugar topping
1/2 tbsp white sugar
1/4 tsp ground cinnamon

Steps

Preheat oven to 180°C and grease and line a loaf tin.

In a stand mixer, cream together butter and sugar for a couple of minutes until light and fluffy.

Beat in eggs, one at a time, until well mixed. Add in vanilla essence and mix again.

In a small bowl, mix together the flour, baking powder, salt and cinnamon. Slowly pour into the creamed mixture, alternating with the milk. Beat until just combined, but don’t overmix.

In another small bowl combine the apple mixture ingredients (chopped apple, brown sugar, cinnamon, and nutmeg).

Spoon half of the mixture into the loaf pan, then top with half of the apple mixture - spreading out.

Spoon the rest of the batter then the remainder of the apple mixture on top, using a knife to lightly swirl some of the apple through.

Combine the cinnamon and sugar and sprinkle on top. Bake for approx. 50-60 mins until a skewer comes out clean.

Remove from oven and leave to cool in the pan for 10 mins before transferring to a wire rack to cool completely. Once cold, slice and enjoy!
