Ingredients

Adjust Servings:
1 Pack of Danny’s Original Pita Bread
Meat Mixture
250g Lamb Mince
1 level tsp Ground Cumin
1 tsp Baharat (mixed middle eastern spices) or ½ tsp of All Spice
Pinch of Ground Cloves
¼ Tsp Nutmeg
¼ Tsp Cinnamon
1 Medium Brown Onion finely chopped
½ Cup Of finely chopped Fresh Parsley
Olive Oil
Salt & Pepper to Season
Tahini Sauce
½ cup Tahini
Juice of one lime
1 Small clove of garlic crushed
½ tsp Salt
½ cup Cold Water as required
1 tbsp Finely Chopped Fresh Parsley
Serve with Salad
2 Tomatoes
1 Lebanese Cucumber
½ cup Fine Chopped Fresh Parsley
Lemon

Steps

Cut all four of Danny’s Pita breads into half and set aside.

To prepare the Tahini Sauce, combine all of the ingredients (except the parsley) and half of the water in a bowl and mix until smooth. Add water gradually too create a thick sauce (with the consistency of honey). Add parsley and mix.

Combine all of the ingredients of the meat mixture in a bowl and add two tablespoons of Olive Oil. Once thoroughly mixed, lightly moisten your hands and form the meat mixture into balls (golf ball sized about 60g in weight) and place inside one half of the pita.

Spread the meat mixture inside the pita bread evenly ensuring that the meat is level with the top of the pita.

Warm a large pan on a medium heat on the stove. Brush the top of the pita with olive oil and place the pitas top down onto the pan (so the meat mixture and oiled top of the pita is heating on the pan) and fry until golden brown.

Flip the pitas on to one side in the pan and brush the top side with olive oil, then turn upside down so the oil coated side of the pita is touching the pan.

Cover the pitas with greaseproof paper and apply pressure with another pan to ensure the pita has the most contact with the pan. Fry until golden brown. Repeat with the other side of the pita until both sides are golden brown.

For presentation, cut each half of the pita into three triangles, lay out on a plate and then drizzle the tahini Sauce over the top. Serve with a nice fresh salad. Yum!
