Asian Inspired Pita Bread

    Heat up a wok and add the chicken, garlic, sesame oil, and 1 chopped shallot to brown.

    After a few minutes add soy sauce, chili oil, mirin, and rice wine vinegar to the wok.

    Let some of the liquid evaporate then add the honey and mix around to coat the chicken evenly

    While the chicken is cooking, make the mango pickle by adding 1tbsp of rice wine vinegar, star anise, mustard seeds, and ground coriander to a saucepan. Place on the stove to medium heat.

    Finely slice up the second shallot and add to the pickle.

    Roughly chop the tinned mango and mix it into the saucepan. Turn down the heat and stir.

    In a nonstick fry pan place the peanuts and sesame seeds on the heat to give them some colour.

    Toast pita pockets. Slice pitas open and place the chicken, mango pickle, nuts and seeds inside. Serve and enjoy!
