Sticky balsamic lamb with apple and lentil salad

Steps

Cook lentils slowly in some lightly salted water until soft but still holding their shape.

Heat a large pan over medium-high heat. Season the lamb and cook, in 2 batches, for 2 mins each side for medium, Transfer to a plate.

Add the sugar and 60ml of the balsamic glaze to the pan and cook for 30 secs or until simmering

Return the lamb to the pan and turn to coat in the sauce. Remove from heat.

Meanwhile, combine the lentils, apple, celery, rocket and pumpkin seeds in a large bowl, drizzle with some good olive oil and a pinch of salt then arrange the salad on a serving platter.

Sprinkle with blue cheese and drizzle with the remaining balsamic glaze. Top with the lamb.
