Ingredients

115g Unsalted butter
1/2 cup (approx 1-2 bananas) Mashed banana
125g Brown Sugar
1 Egg
1 tsp Vanilla Essence
1 cup Plain Flour
1/2 tsp Baking powder
1/4 tsp Salt
3/4 cup Chopped nuts

Preheat oven to 180°C. Line 20cm x 20cm tin with baking paper.

Melt the butter. Mash the banana.

Remove from heat and whisk in the banana, sugar, egg and vanilla essence.

Sift in the flour, baking powder and salt. Fold to combine.

Stir through the chopped nuts.

Spoon into the prepared tin and bake for approx. 22-24 mins.

Cool completely before cutting. Dust with icing sugar (optional).
