Ingredients

2 cups Ceres Organics Buckwheat Flour
4 large ripe bananas
1 cup nut milk
¼ cup Ceres Organics Peanut Butter
1 tbsp Ceres Organics Apple Cider Vinegar
1 tsp baking soda
1 tsp vanilla extract
¼ tsp salt
Filling - Ceres Organics Peanut Butter*
Filling - Boysenberry Jam (homemade or store-bought)

Method

Preheat oven to 190°C on bake and line or grease a muffin pan.

Add all ingredients to a high-speed blender or food processor and blend until smooth.

Pour mixture into the muffin pan, filling each cup half way.

Add ½ tsp of peanut butter + ½ tsp of jam onto each muffin, then top with remaining mixture.

Add an extra dollop of jam and swirl into the mixture.

Bake for 20 mins, or until a skewer inserted in the centre comes out clean.
