Ingredients

2 Cups All Purpose Flour
1 tsp Sugar
1 tsp Salt
1 Knob Unsalted Butter Cut into small pieces and chilled
2 Eggs Lightly beaten
1/4 Cup Dry White Wine
1 tsp White Vinegar
1 tsp Vegetable Oil
1/2 tsp Chilli Flakes
400g Beef Mince
1 Garlic Clove Chopped
1 Onion Diced
1 Red Chilli Sliced
1 Red Pepper Finely Diced
3 Tomato Deseeded and chopped
1/2 tsp Tomato Paste
1/4 Cup Chicken Stock
1/2 bunch Coriander Chopped
Salt and Pepper
Grated Cheese Optional
Vegetable Oil
Chipotle Chillis
2-3 tsp Mayo

Steps

Dough

In a blender, pulse the flour with the sugar and salt. Add the butter and pulse until the mixture resembles coarse meal.

Mix eggs, wine and vinegar and drizzle over the flour mixture. Pulse until the dough just comes together.

On a lightly floured work surface, gently knead the dough until smooth. Wrap the dough in plastic and refrigerate until firm, about 1 hour.

Filling

Fry the chilli flakes in some oil for a minute until the oil is coloured, then add the beef and fry until cooked and broken up. Add the garlic, onion, chilli and peppers and cook until softened, the add tomato paste, tomato dice and the chicken stock, simmer until dry then season and add the coriander, allow to cool.

Roll out the dough on a flowered surface until thin, then cut out 3 inch discs then put a spoon of the beef mix just off the centre of the dough, add cheese if using, then fold over and crimp.

Fry the empanadas in 1/2 inch of oil until golden on both sides.

Serve with some chipotle mayo on the side
