Pull the oyster mushrooms apart and slice the garlic. |

Cook the noodles, keep warm |

Heat a wok and add some oil, stir fry the mushrooms for 1 minute, add garlic and chilli and continue cooking for 2 minutes. |

Mix the soy, water, crushed Sichuan peppercorns and sugar together and pour over the mushrooms and add noodles, cook until warm and glazed, 2 minutes then finish with the coriander, spring onions, sesame oil and toasted, serve. |
