Ingredients

220gms Flour
1 tsp Baking Powder
1 tsp Baking Soda
½ tsp Salt
115gms Butter – Softened to room temp
150gms Brown Sugar
2 Eggs
½ Cup Sour Cream
½ tsp Vanilla Essence
60ml Milk
1 ½ Cups Frozen Blackcurrants
½ tsp Speculaas Spice or Cinnamon
100gms White Chocolate - Chopped

Makes 12cups of buttery, soft muffins

Oven 210C fan bake

Steps

Pre heat oven and flour the muffin tin

Hold a small amount of chopped choc, spice and brown sugar to put on top before baking.

Whisk the flour, baking soda, baking powder, spice and salt together in a bowl.

Beat the butter till creamy then add sugar and beat on high speed till light and creamy (about 2mins) then add eggs and beat until incorporated. Add sour cream and vanilla. Add dry ingredients and fold through until no flour lumps are left, then fold through chocolate and frozen blackcurrants using milk to loosen if necessary, but you want mix to be a thick batter.

Spoon into prepared muffin tin, fill to the top, sprinkle with spice, chocolate and sugar on top and place in hot oven 210C for 5 mins then turn down to 170C for 12-18 mins.

Cool in tin for 5mins before lifting out.
