Ingredients

2kg Beef Ribs
1 Bulb Garlic
2 Onions
2 Red Chillis
3 Spring Onions
3 Tomatoes
1kg Fresh White Noodles
6 Bok Choy
6 Star Anise
20g Szechuan Pepper
Cinnamon Stick
3 Bay Leaves
100g Pickled Cabbage
3L Beef Stock
2 Bunch Coriander
Seasoning
Vegetable Oil
Soy Sauce
Chilli Bean Sauce
Rice Wine
Salt
Sugar
White Pepper

    Cut the beef rib into large pieces.

    Heat oil in a pot, sauté ginger, garlic, spring onion, onion and tomato. Then add in the beef and stir fry it together until the surface is cooked. Then add in water to cover it. Put in the Szechuan pepper, star anise, bay leaf, cinnamon and the seasoning. Cook it until the beef is tender. And take it out of the braising liquid.

    Finely slice the pickled cabbage and sauté it in a pan to dry it off.

    Cook the noodle and the bok choy and put it in a bowl, then add in the braised beef on top. Add in beef stock and the braising liquid, sprinkle coriander and chopped spring onion and pickled cabbage on the top and serve
