Ingredients

5 Tsp Olive Oil
3 Large Onions Thinly Sliced
1 Bulb Fennel Halved and thinly sliced lengthwise, fronds reserved
2 Cloves Garlic Minced
8 Cups Beef Stock
500g Mixed Mushrooms Try: Shittake, Oyster and Portobello Mushrooms. Finely Chopped
1/4 Cup Dry White Wine
Salt and Freshly Ground Pepper

In a large saucepan, heat 4 tablespoons olive oil over medium-high.

Add the onions and fennel and cook, stirring, until soft and caramelised.

Meanwhile, in a 12-inch skillet, heat the remaining 1 tablespoon olive oil over medium-high. Add the mushrooms and cook, stirring, until golden

Scrape the mushrooms and wine into the soup and cook, stirring, to marry flavours.
