Ingredients

100 g Westgold unsalted butter
2 tbsp golden syrup
3/4 cup
3/4 cup shredded or desiccated coconut
1 1/2 cup crushed cereal
3/4 cup flour
1 1/2 tsp ground ginger
1 1/2 tsp baking powder
2 tbsp Westgold unsalted butter
4 tsp golden syrup
1 cup icing sugar
1 tsp ground ginger

Preheat oven to 180°C.

In a large bowl, melt butter, sugar and golden syrup in the microwave in 20 second bursts (can also do on the stovetop).

Add the remaining ingredients, stir well to combine.

Press into a lined 20x20cm tin and bake for 20 mins. The top should turn a nice golden colour.

Once cold, lift out of the tin and make the icing as follows…

Melt golden syrup and butter in the microwave (or in saucepan). Stir in the icing sugar and ginger. Mix well. While still warm, pour over the base and leave to set before cutting.
