Ingredients

300g Fresh Line Caught Trevally Or other firm white fish, not flaky
1 Cup Lemon Juice About 4 Lemons
1/4 Large Telegraph Cucumber
1 Small Red Onion
4 Large Tomatoes Seeded
Handful of Fresh Coriander Finely Chopped
1 Avocado
Pinch of Hot Chilli Flakes
Guacamole Casera
1/4 Brown of Red Onion Finely Chopped
Finely Chopped Fresh Coriander
1 Tbsp Minced jalapeño or serrano chilli Optional
2 Large Avocados
2 Tbsp Freshly Squeezed Lime Juice
Salt
Ground Pepper

Dice the fish into 5mm chunks and marinate in ¾ cup of the citrus juice for 20 minutes. Dice cucumber, red onion and tomatoes to the same size.

To serve, mix all diced vegetables together in a bowl with fish and coriander. Dress using remaining citrus juice. Garnish with slices of avocado. If you want an extra kick, sprinkle on some hot chilli flakes.

Serve with totopos or, for a healthy alternative, homemade corn tortillas.

Guacamole Casera

Using a mortar and pestle, mash together the chopped onion, 1 tablespoon coriander and ½ tablespoon chillies (if using) to make a rough paste. Transfer to a medium bowl.

Cut avocados in half lengthwise and remove stones. Use a spoon to scoop flesh into the bowl with the onion paste. Gently mash and mix with a fork until chunky-smooth.

Fold remaining coriander and chilli into mixture, tasting along the way to check heat.

Fold in lime juice, add salt and pepper to taste, and serve with a basket of totopos or slices of cucumber.
