Ingredients

250g Chicken Mince
30ml Oil
4 Chicken Thighs
1/2 Lemon Grass Stick
1 Clove Garlic
1 Handful Coriander
2 Spring Onions
Handful Panko Bread Crumbs
1 Mango Diced
1 Chilli Sliced
1 Red Onion Sliced
8 Button Mushrooms Quartered
Sauce
200ml Sake
150ml Mirin
150ml Soy Sauce
100ml Chicken Stock
1 Knob Ginger
160g Brown Sugar
1-2 tsp Corn Flour

Blend the chicken thighs with the lemon grass, ginger and garlic until incorporated, place in a bowl and mix through the mince, panko crumbs, spring onions and coriander

Chill and ball, then cook in a pan.

Mix all the sauce ingredients together apart from the corn flour and boil for a few minutes to intensify the flavour, add the corn flour in the for of a slurry to thicken.

In a wok sauté the vegetables for a few minutes until soft, add the sauce, cooked chicken balls and mango, toss to glaze and stir through the mango and some chopped coriander
