Ingredients

225g Bow Tie Pasta
1/2 tsp Olive oil
1 garlic clove, minced
1 boneless skinless chicken breast, cut into bite-size pieces
crushed red pepper flakes to taste
2 tbsp oil-packed sun-dried tomatoes, drained and cut into strips
1/4 cup pesto sauce
Pesto Sauce
2 cups Fresh basil leaves
1/3 cup pine nuts
1/3 cup freshly grated parmesan
3 garlic cloves
1/3 cup extra virgin olive oil
1/2 tsp salt
1 tsp lemon juice
black pepper to taste

Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.

Heat oil in a large skillet over medium heat. Saute garlic until tender, then stir in chicken. Season with red pepper flakes. Cook until chicken is golden, and cooked through.

In a large bowl, combine pasta, chicken, sun-dried tomatoes and pesto. Toss to coat evenly.

To make the pesto:
Blitz the basil, pine nuts, cheese and garlic together in a blender or food processor. Scrape down the sides, add the oil, lemon juice and salt – and blend again until everything is well combined. Season to taste
