8 George & Jo's Chicken thighs (boneless and skinless)
8 Thin slices prosciutto
8 Fresh sage leaves, plus extra sage for garnish
2 Tbs Olive oil
Sea salt and freshly ground pepper

Preheat an oven to 180C.

Open out the chicken thighs and place 2 x sage leaves in the middle. Season with salt and pepper. Then roll the meat back up into shape and wrap another 1 -2 sage leaves on the outside of the thigh and then wrap a slice of prosciutto directly around the sage and meat.

Arrange the chicken pieces in a shallow baking dish. Brush the skin with the olive oil, and season with salt and pepper.

Roast until the prosciutto is crispy, and the juices run clear when a thigh is pierced at the thickest part with a fork, about 35 minutes. Remove from the oven and let rest for 10 minutes before serving.

Transfer the chicken pieces to a warmed platter and garnish with sage sprigs. Serve immediately.

Serve with creamy potato and parmesan mash.
