Ingredients

400g Linguine
250g Raw King Prawn Cutlets Meat Chopped
2 ½ Tsp Olive Oil
½ Lemon Juice
2 Garlic Cloves Thinly Sliced
1 Shallot Finely Chopped
2 Tomatoes Roughly Chopped
1 Red Chilli Finely Sliced
2 Tsp White Wine
Knob butter
Small Handful Mint & Basil Leaves Shredded
40g Feat Crumbled

Cook the linguine in a large pan of boiling water for 9 minutes. Meanwhile, toss the prawns with a splash of olive oil, season. Heat a frying pan over a high heat, until smoking, toss in the prawns and fry for 1-2 minutes, sprinkle in ½ the lemon juice and tip out of the pan into a bowl and set aside.

Return the pan to the heat add a splash more oil add the garlic, shallot and chilli, sweat for 1 minute, add the tomatoes and continue cooking for a minute. Deglaze with the wine and add the butter, cooked prawns and herbs.

Drain the pasta, reserving a a few spoons of the cooking liquid and add to the pan.

Serve in a bowl and crumble over the feta and a squeeze more lemon and serve.
