Ingredients

30g Butter
500g Skinless Chicken Breast Fillets Pulsed in a food processor or sliced
1 Large Carrot Peeled and Finely Chopped
1 Large Onion Finely Chopped
5 Cloves Garlic Chopped
1 Red Chilli Chopped
3 tsp Chilli Powder
2 tsp Ground Cumin
1 tsp Ground Paprika
150ml Hot Buffalo Wing Sauce
850g Passata
1 Can Chopped Tomatos
1 1/3 cans Red Kidney Beans Drained
Sour Cream To Serve
Coriander To Serve

Heat some oil and butter in a large pot over medium-high heat. Place chicken in the pot. Cook and stir for 4 minutes, until chicken is no longer pink.

Stir in the carrot, onion, celery, garlic, chilli, chilli powder, cumin, paprika and salt and pepper; cook and stir until the onion is translucent and the vegetables are beginning to soften, 3 to 4 more minutes.

Stir in the hot buffalo wing sauce, passata, chopped tomatoes and bring to the boil, simmer for 40 minutes the stir through the kidney beans.

Season and garnish with sour cream and freshly chopped coriander.
