Ingredients

2kg Beef Brisket Diced
500ml Beef Stock
3 Large Dreid Ancho Chilli
2 Red Onions Diced
10 Cloves of Garlic Sliced
1 Red Pepper Sliced
1 Yellow Pepper Sliced
Olive Oil
2 tsp Ground Cumin
2 tsp Smoked Paprika
1 tsp Dried Oregano
2 Bay Leaves
2 Fresh Chillis
1 Cinnamon Stick
2 Tins Plum Tomatoes
1 tsp Instant Coffee
3 tsp Mascavado Sugar
2 x 400g Cans Beans Try: Kidney, butter or pinto beans
Sour Cream To Serve
2 Spring Onions
1 Chilli
Coriander To Serve

Steps

Heat the beef stock and add the dried chillies to rehydrate.

Heat some olive oil up in a large casserole pot and start to cook the onions, cumin, smoked paprika, oregano and bay leaves for 10 minutes.

Chop the fresh and rehydrated chillies then add to the onions, cook for 1 minute then add the sliced garlic, cinnamon, salt and pepper and the chilli infused beef stock.

Bring to the boil and add the tomatoes, coffee and sugar then simmer with slid on for 2.5 hours, stirring now and then.

Add the peppers and drained beans and continue cooking for another 40 minutes with the lid off.

Serve in Old El Paso Mini Stand n Stuff Tortillas shells with some sour cream, Spring onion, chilli and coriander on top.
