Ingredients

100g Butter
1 cup Caster sugar
2 Eggs
1 tsp Vanilla essence
3/4 cup Flour
1 tsp Baking powder
½ cup Donovans cocoa powder
100g Donovans white chocolate drops
100g Donovans dark chocolate drops
3/4 cup Walnut pieces
Icing sugar to dust
Freeze dried fruit powders, raspberry or strawberry
Whipped cream and berries to serve

350g 70% chocolate
270ml Hot water

Steps

Preheat the oven to 180c.

Grease a baking tin, and line the base with baking paper.

Melt the butter in a saucepan, remove from the heat, and whisk in the sugar, then add the eggs and vanilla essence, and whisk to combine.

Sift the flour, baking powder and cocoa into the mixture, add the white and dark chocolate drops, and walnuts, then fold through until just combined.

Pour the mixture into the prepared tin.

Bake in the oven for about 15-20 minutes.

Remove from the oven and cool in the tin before slicing.

Serve with berries and whipped cream.

HESTON’s Choc Mousse Instructions

Place the 350g chocolate in a bowl and add the hot water. Using a whisk, mix until the chocolate has dissolved, Place the bowl over an iced water bath and whisk until the mixture begins to thicken.

Remove the bowl from the iced water bath and continue whisking until the mixture just becoming soft set

Serve or set further in the fridge
