Creamy Mussels with Danny’s Garlic Pita Bread

Ingredients

1 Pack of Danny’s garlic pita bread
2kg Mussels
250ml Cream
2 Med brown onions
4 Cloves Of garlic
1 cup Chardonnay
100g Butter
Finely chopped Parsley to garnish
Salt & Pepper to season

Clean mussels as desired, finely chop the onion and fry in a hot pan with the butter until they become transparent. Pour in ½ of the wine, bring to the boil and place the mussels on top of the onions, giving a quick grind of pepper to season.

Cover immediately and steam the mussels for 5 minutes, occasionally giving the pan a shake to toss the mussels in the pot and combine all of the amazing flavours.

Remove mussels from the pan and place in a bowl, ensuring you cover the bowl with either plastic wrap or foil to keep in the heat.

Finely chop the garlic and with the remaining wine, add to the pan and simmer for a couple of minutes, then finally add the cream. Reduce the heat and cook with the lid slightly open for about 10/15 minutes to reduce the sauce, season to taste, remembering the mussels are naturally salty.

Whilst the sauce is simmering, split each pita into two and place flat, butter side up into a medium grill and toast until golden brown. Slice some into triangles and create a pile with the others, again butter side up.

Arrange the mussels in a serving bowl, pour the sauce on top and then garnish with the parsley and finally season if required.

Serve the mussels with the garlic bread, use the bread to wipe up this tasty sauce and enjoy!
