Ingredients

Adjust Servings:
1 pack Danny’s Original Pita Bread
1 pack Danny’s Falafel
Hummus to serve four people
Matbucha
1 Red Capsicum (finely chopped)
1 Green Capsicum (finely chopped)
1 Medium brown onion (chopped)
1 can Chopped tomatoes
3 Very hot chillies (very finely chopped)
3 Cloves of garlic (finely chopped)
Salt
Olive Oil
Tahini Sauce
½ cup Raw Tahini
1 Garlic clove crushed
The juice of one lemon
½ tsp Salt
½ cup Finely chopped fresh parsley
¼ cup Water

Steps

Preheat oven to 180 Celsius.

Firstly, make the Matbucha by frying the onion on a medium heat until lightly golden. Add capsicum and fry until it softens, this should take about 10 minutes. Add salt to season.

Add the can of chopped tomatoes, mix well, reduce the heat and simmer for a further 10 minutes.

Remove from heat and set contents of the pan aside.

Add more olive oil to the pan and heat over a medium to high heat. Add the garlic and quickly fry until it’s a beautiful light brown colour. Add the chillies and fry for another 2-3 minutes.

Add the capsicum mix to the pan, stir and reduce the heat, simmering for a further 10 minutes, season to taste and set aside.

Put the falafels on an oven tray and put into the preheated oven for 5 minutes.

To make the Tahini Sauce, in a mixing bowl, add the raw tahini, garlic, lemon juice and ½ tsp of salt. Mix well until combined, adding water if it’s too stiff and add extra salt if required.

Add the parsley, mix well and set aside.

Remove the falafels from the oven after 5 minutes.

To serve, form a ring of hummus on a large plate. Place the tahini in the centre of the plate, leaving space for the Matbucha, which you will put on top. Make sure you leave a gap between the hummus and the tahini sauce.

Arrange the falafel in the circle between the hummus and the tahini sauce, and garnish the hummus with a sprinkle of paprika and some olive oil.

Serve with some warm Danny’s pita bread and enjoy!
