Ingredients

Adjust Servings:
4 Danny's Original Pita Bread
1 Pack Danny's Falafel
1/3 Lettuce finely chopped
½ cup Parsley finely chopped
2 Medium Tomatoes finely chopped
2 Lebanese cucumbers finely chopped
1 Small Red Onion Optional
1 Lemon Juice only
Salt to season
Tahini Sauce
½ cup Raw Tahini
Juice of one lime
1 small Clove of crushed garlic
½ tsp Salt
½ cup Cold water as required
1 tbsp Finely chopped fresh parsley

Cut all four of Danny’s Pita breads into half and set aside.

To prepare the Tahini Sauce, combine all of the ingredients (except the parsley) and half of the water in a bowl and mix until smooth. Add water gradually to create a thick sauce (with the consistency of honey). Add parsley, mix and set aside.

Prepare the salad by adding all of the finely chopped lettuce, parsley, tomatoes, cucumber and red onion to a medium sized bowl, add the lemon juice and salt to taste

To cook the thawed falafel, either deep fry at 160 degrees for one and a half minutes, or alternatively, heat in a preheated oven at 180 degrees for no longer than five minutes.

To serve, cut the pita open at the top, place 5 falafel balls into the pita and squeeze lightly to flatten them a bit. Whilst the pita is in the palm of your hand, top with the salad and the tahini sauce. Serve immediately.
