Ingredients

Fish Siniya
2 Danny's Garlic Filled Pita Bread
2 Sole or your choice of white fish (scaled, gutted and cleaned)
Salt & pepper to season
Flour to coat
Olive oil for frying
Tahini Sauce topping:
½ cup Tahini
juice of 2 limes
1 clove of garlic (crushed)
Salt
Water

Fabulous fish dishes
Like many Kiwis, Yaron loves nothing better than to take his boat out over Christmas and catch some nice fresh fish for dinner. After a long day on the boat, what could be better than some very simple but delicious meals to make use your freshly caught fish?

Preheat the grill.

Mix the tahini, lime, garlic and salt and gradually add the water until all of the ingredients combine to make a smooth, thick paste. Put aside.

Salt & pepper the fish and lightly sprinkle with flour.

Heat a large pan over medium heat, add the olive oil and when hot, add the fish and fry for 2 ½ minutes on each side.

Place the semi fried fish in a baking tray, coat the top of the fish generously with the tahini sauce and place under the grill making sure the tray isn't too close to the element. Grill for 10 minutes until the tahini is golden brown.

Whilst the fish is under the grill, remove the Danny's garlic filled pita bread from the pack and massage each pita from the centre out (in a round motion) in the palm of your hand to evenly spread the butter on the inside. Cut each pita around the edge and grill until golden brown.

To serve, pile the pita, serve with the fish and eat together.
