Ingredients

2 Danny's Garlic Filled Pita Bread
2 Sole (scaled, gutted and cleaned)
Salt & Pepper to season
Flour for sprinkling
Juice of 2 limes or lemons
100g butter (to clarify – see method)
20g butter

Fabulous Fish Dishes – Sole Citron

Like many Kiwis, Yaron loves nothing better than to take his boat out over Christmas and catch some nice fresh fish for dinner. After a long day on the boat, what could be better than some very simple but delicious meals to make use your freshly caught fish?

Season the fish with salt & pepper, lightly coat with flour and shake off any excess.

(Clarifying the 100g of butter)
- Place the butter in a microwavable glass dish and completely cover with glad wrap
- Place in the microwave and heat on full. The butter will start to melt very quickly and will start to boil (This will happen within a few seconds so watch closely).
- As the butter starts to boil, stop heating, remove from the microwave but do not open the glad wrap, let it rest for a few minutes. (If you leave the butter in the microwave too long to cook, it will start to spit).
- As the melted butter rests, the solids will fall to the bottom of the pot, leaving a clear oil at the top. (This is what you want to use).

In a hot pan, gently pour in about 4tbsp of the butter oil.

Fry the fish for about 3 minutes on each side until the fish turns golden brown. Place on a serving plate and set aside.

Pour the excess butter from the pan, reduce the heat and pour the lime/lemon juice into the pan, as the juice starts to boil, clear the pan of any residue created by frying the fish.

We are now aiming to reduce the lime/lemon juice to about half of what we started with, if the juice starts to boil, remove from the heat immediately.

Place the 20g block of butter into the lemon/lime sauce in the pan and stir until the butter and juice amalgamates and becomes a much thicker sauce, do not allow to boil.

Whilst the fish is under the grill, remove the Danny's garlic filled pita bread from the pack and massage each pita from the centre out (in a round motion) in the palm of your hand to evenly spread the butter on the inside. Cut each pita around the edge and grill until golden brown.

Pour the lime/lemon sauce on top of the fish and serve with the grilled Danny's filled garlic pita bread.
