Fish Cakes with Lemon Aioli

Ingredients

300g White Fish Fillets
150g Salmon Fillet
50g Shredded Mozerella Cheese
1 Egg
1/4 Cup Mayonaise
2 tsp Finely Chopped Dill Plus Extra To Garnish
Sea Salt
Black Pepper
1 Can Corn Kernels
1/2 Red Onion
1/4 Cup Flour Plus More If Needed
Lemon Aioli Sauce
1/2 Cup Mayo
1 tsp Lemon Zest
2 Tbsp Lemon Juice
1 Clove Garlic Pressed or Finely Minced

Pat dry the fish with paper towels then dice into pea-sized pieces.
Transfer to a large mixing bowl, add shredded mozzarella, 1 egg, mayo, dill, and season with salt and pepper. Stir together then add 1/4 cup flour and mix until batter is creamy and well combined.

Add chopped onion and corn kernels.
Heat a large non-stick pan over medium heat and some oil. Add 1 heaping Tsp at a time and flatten out the tops of your fritters as you. Cook for about 3 minutes per side or until golden brown on the edges and cooked through.

Lemon Aioli Sauce

In a small bowl, add mayo and stir to remove any lumps. Add 1 tsp lemon zest, 2 Tsp lemon juice and pressed garlic clove and stir to combine.
