Ingredients

Fish Fingers
400g Chunky White Fish Cut Into 1cm Thick Strips
100g Panko Breadcrumbs
40g Parmesan Cheese Finely Grated
1/2 tsp Smoked Paprika
2 Eggs Beaten
50g Plain Flour
Sea Salt
Ground Black Pepper
1 Knob Butter
1 Lemon
Spicy Coriander and Chive Mayo
5 tsp Mayonnaise
3 tsp Coriander Finely Chopped
2 tsp Chives Finely Chopped
1 tsp Red Chilli Finely Chopped
1 Shallot Finely Chopped
2 tsp Pickles Chopped
Mushy Peas
225g Dried Marrowfat Peas Or Split Green Peas
1 tsp Bicarbonate Soda
Salt
Pepper
Pinch Sugar To Taste

Mix the breadcrumbs with grated parmesan cheese & smoked paprika

Season the cod fingers well before coating. Coat them in the flour then dip them in the beaten egg followed by the breadcrumb mixture. Fry the fish fingers in hot oil and foaming butter for 1-2 minutes on both sides until crisp & golden then place on absorb paper to remove any excess oil.

Divide the fingers your serving plates & serve with a spoonful of the spicy coriander & chive mayonnaise, lemon and mushy peas.

Spicy Coriander & Chive Mayonnaise

To make the spicy coriander and chive mayonnaise, mix all the ingredients together & set to one side.

Mushy Peas

Place the peas in a large bowl or stock pot, the peas will swell and so need plenty of room to expand.

Add the bicarbonate and cover with 300ml / ½ pint boiling water and stir to make sure the bicarbonate has dissolved. Add the peas and leave to soak overnight, or for a minimum of 12 hours.

Drain the peas in a colander, then place in a large saucepan, cover again with cold water and bring to the boil. Lower the heat and simmer for approx 30 mins or until the peas have softened and turned mushy. Season with salt and pepper to taste and serve hot with your fish fingers.
