500g Fresh la mein wheat noodles or fresh spaghetti noodles or egg noodles
Dan Dan Sauce
500g Ground pork or beef or substitute with chopped brown or field mushrooms
1 tbsp Peanut oil
1 tbsp Garlic (about 3 cloves) Minced
1 tbsp Fesh ginger Minced
2 Spring onions thinly sliced -white part only green part as a topping
2 tbsp Shaoxing rice wine or substitute with dry sherry or whiskey
1 tbsp Light soy sauce
2 tbsp Chinese sweet bean paste or substitute with hoisin sauce
Oyster sauce 2 tbsp
1/2 Cup Chicken stock or water
1/4 Cup light soy sauce
3 tbsp Chinese sesame paste or tahini or peanut butter
2 tbsp Chinese black rice vinegar or balsamic vinegar
1 tbsp Sesame oil
1 tbsp Sugar or honey
1/2 tsp Toasted, ground Szechuan pepper 
1 cup Dry-roasted peanuts, finely chopped
2 tbsp Chinese preserved mustard greens/ vegetables, chopped (optional)
2 Spring onions - green part- thinly sliced
A pinch per bowl of Szechuan peppercorn gently toasted until fragrant in dry pan and finely pounded)

To prepare the dressing, put the sesame paste in a bowl, slowly whisk in the wet
ingredients a little at a time to get a smooth even consistency. Set aside.


Transfer each topping to their own individual bowls. Set aside.


Heat a large wok or skillet over medium-high heat. Add the oil, garlic, ginger, white parts
of the spring onions, fry for 30 seconds. Add the meat or mushrooms and fry until brown. Add Shaoxing wine to deglaze the pan. Next add sweet bean paste, oyster sauce and soy
sauce and cook for a further minute. Keep warm.


ake your largest pot, fill with lots of salted water, bring to rolling boil. Cook the noodles (note: do not overcook). Immediately strain and serve noodles into individual bowls.


Arrange Dan Dan sauce, dressing and toppings on the table. Assemble your bowl of noodles to suit your taste and mix well. For that authentic kick, be bold with a swirl of La You Chilli Oil and a pinch of Szechuan pepper. Mix well and enjoy with a cold glass
of beer!
