Ingredients

6 – 8 Cloves garlic very finely diced
Oil
2 Garlic cloves, minced
4 Tsp Butter
1 SunRice microwave rice pouch
½ cup Chicken broth
¼ – ½ cup Scallions finely sliced
3 Chicken thighs, sliced
2 Tsp Soy Sauce
1 stick Lemon grass, finally chopped
Salt
White pepper

Heat oil in a large saucepan over medium heat. Add garlic slices and saute, moving constantly, until golden and crisp. Transfer to paper towels to drain. Pour out excess oil then return to the stove.

Mix the chicken with the soy and lemon grass and marinade for 20 minutes. Add half the butter. Once melted, add minced garlic. Cook for 1 ½ minutes or until the garlic starts to turn light golden and the butter is well infused with garlic flavour.

Add rice, stir to coat in garlic butter, then add the chicken and stir through. Add broth, place lid on saucepan. Bring to simmer stirring now and then until all the rice is warmed.

Fluff with fork, transfer into serving bowl. Stir through remaining butter and spring onions and sprinkle crispy garlic over the top.
