Ingredients

2 tsp Olive Oil
1 tsp Lemon Juice and Zest
6 Garlic Cloves Grated
1/4 tsp Ground Cumin
1/4 tsp Chilli Flakes
1/4 tsp Salt
1/4 tsp Ground Black pepper
200g Prawn Cutlets
knob Butter
100ml White Wine
200g Spaghetti
Fresh Basil
1 Shallot
1 Fresh Chilli
1 tsp Capers

Add the olive oil, lemon juice and zest, garlic, cumin, chilli flakes, salt and pepper to a bowl, then add prawns and mix, marinade for 20 minutes

In a large hot pan, sauté the prawns in a little more oil for 1 minute, add chilli, shallot and cook for another 2 minutes.

Deglaze with the wine and when reduced by half add the butter and check the seasoning.

Toss through warm cooked spaghetti, capers and chopped basil and serve.
