400g Firm Red Ripe Tomatoes
1/3 Cucumber Peeled, De-seeded, chopped
1/2 Red Onion Chopped
2 Cloves Garlic Crushed
1/2 Red or Green Pepper De-seeded, Chopped
6 Basil Leaves
4 Tsp Olive Oil
2 Tsp Red Wine Vinegar
1/2 Red or Green Pepper De-seeded, Finely Chopped
1/3 Cucumber Peeled, De-seeded, chopped
1 Spring Onion Finely Chopped
1/2 Red Onion Finely Chopped
As Desired Basil Leaves
4 Slices Spanish Cured Ham Or any Cured Ham as Available
1/2 Crusty Bread For Crutons

Blanch the tomatoes in boiling water for 30 seconds, then refresh in ice and peel of the skin.

Half and scoop out the seeds and roughly chop, blend with the rest of the ingredients with salt and pepper until smooth.

Tip into a bowl and chill in the fridge, chop garnish into small pieces then sprinkle over the top when ready to serve.

Tip – leave the gazpacho in the fridge for a few hours to improve the flavour.
