Ingredients

large fish fillets hapuka snapper
4 Spring onions
Knob Ginger, julienned
Hand full Coriander
2 Chilis
3 tsp Shaoxing wine
1 tsp Sesame oil
1 tsp Soy sauce
1/2 tsp Sugar
Salt
4 Black pepper corns Crushed
Prawn fried rice
3 cups Previously cooked rice, cold
2 Eggs
1 tsp Oyster sauce
1 tsp Soy sauce
1 tsp Xo sauce
100g Frozen prawn meat/tails, chopped

Ginger Steamed Fish with Prawn Fried Rice

Make an incision in the fish and stuff with a little chilli, ginger, coriander and salt and pepper.

Make a bed with the rest of the ingredients and arrange on a plate then lay the fish on top, pour over the shaoxing wine, steam fish over simmering water for about 10-12 minutes depending on size.

Whilst the fish is resting warm the sesame oil, soy sugar, salt a, crushed pepper and coriander, then pour over the fish.

In a hot wok heat a little oil and stir fry the green parts of the spring onion and some ginger strips for 10 seconds and more coriander and pour immediately over the fish and serve.

Stir fry the egg in a hot wok then remove, add some more oil and stir fry the prawns and rice until hot and broken up, then add sauces to taste and serve with the steamed fish.
