Ingredients

80g Of Smoked Akaroa Salmon per serving
Parsley dressing
50g A small bunch of parsley
1 Cup Coconut water
2 Cloves Garlic
1 Cup Pinenuts Not Toasted
1 Tsp Salt
1 tbsp Lemon Juice
For the Salad
Large Bunch Of fresh baby spinach leaves.
4 Pitted medjool dates Sliced lengthways
1 Carrot

Place all the dressing ingredients in your blender and process until smooth.

For the salad, using a vegetable peeler, peel the carrot starting at the wider end into long thin ribbon like peels. Continue this for the making ribbons out of the entire carrot.

Assemble the salad by placing all the salad ingredients in a bowl and dress it with the parsley dressing. Serve it with Smoked Akaroa salmon as per the recipe.
