Gourmet Caramelised Onion & Sausage Rolls with Pumpkin & Roasted Garlic Hommus

Ingredients

2 tbsp Olive Oil
4 medium (480g) Onions Sliced
¼ cup (60mL) Balsamic vinegar
2 tsp Brown Sugar
1 packet Maggi Tomato and Onion Sausages Recipe Base
2/3 cup (160mL) Water
12 Chipolata sausages
Pita Breads Split
1 Jar Dijon Mustard Optional
Pumpkin & Roasted Garlic Hummos
1 Red Onion Chopped
3 Cloves of Garlic
1 Can (300g) Chickpeas Drained
1 Can (250g) NESTLE Reduced Cream
1 tbsp Fresh Lemon Juice
1 Packet MAGGI Pumpkin & Roasted Garlic Soup Mix
Freshly Ground Black Pepper

Steps

Heat oil in non-stick frying pan, add onion and cook on medium heat for 15 minutes stirring gently. Add balsamic vinegar and brown sugar, cook for a further 8 minutes. Add combined Maggi Tomato and Onion Sausages and water and cook 5 minutes or until thickened. (Keep warm)

Cook sausages in a large frying frying pan for 8-10 minutes, turning until browned and cooked through.

To serve add sausage to pita bread, top with caramelised onion and drizzle with Dijon mustard if desired.

Pumpkin & Roasted Garlic Hummus

Place onion, garlic and chickpeas in a food processor and pulse until roughly chopped.

Add reduced cream and combine with chickpea mixture, lemon juice, Pumpkin & Roasted Garlic Soup Mix and pulse to combine. Add pepper to taste.

Refrigerate for 30 minutes and serve.
