Ingredients

2kg Agria Potatoes Peeled and Sliced Thickly
1 Carrot
1 Can Guiness
1L Beef Stock
400g Thin Pork Sausages
400g Thick Bacon
2 Onions
2 Sprigs Thyme
1 tsp Parsley Chopped
Soda Bread

    Pre heat oven to 160c

    In a heavy pot lay the sliced potatoes around the base, season with salt and pepper and some thyme leaves.

    Cut the carrot into chunks and place in the pot.

    Fry of the bacon until crispy then add to the potatoes, in the same pan as the bacon was in start to cook the onions until softened, then pour in the pot.

    Brown the sausages and lay on top of the pot, add the stock and Guinness and bring to the boil the place a lid on top and bake in the oven for 1.5/2 hours.

    Serve with soda bread.
