Ingredients

2 Medium Onions Very Thinly Sliced
500g Thinly Sliced Beef Fatty Beef chuck or Ribeye
2 tsp Sugar
3 tsp Mirin
3 tsp Soy Sauce
2 tsp Sake
1 tsp Kecap Manis Sweet Soy Sauce
1 Cup Beef Stock
4 Egg Yolks
4 Cups Cooked Short Grain or Medium Grain Rice
2 Spring Onions Chopped
2 tsp Toasted Sesame Seeds
1 knob Butter

    Heat some oil in a large pot over medium high heat, and cook the sliced onions for about 10 minutes, stirring often.

    Add the beef and sugar, and cook until the beef is slightly browned. Add the mirin, soy sauce, sake, sweet soy and stock.

    Bring to a simmer, and cook for about 10-15 minutes to reduce the stock into a thin sauce. Taste for seasoning, and add a little more soy sauce if needed.

    Cook rice in a rice cooker, when cooked fluff into a bowl and add the spring onion, sesame and knob of butter and lightly mix.

    Divide the rice among 4 bowls, and top with the beef and an egg yolk, garnish with more spring onion and sesame if desired.
