Ingredients

Chilli Paste
1 tsp Sriracha Sauce
1 tsp Minced Chilli
1 tsp Vegetable Oil
1/2 tsp Sugar
Chicken
1 1/2 tsp Laksa Paste
1 2/2 tsp Soy Sauce
1/2 Clove Garlic Minced
500ml Chicken Stock
250ml Water
2 Chicken Breasts
Laksa Broth
2 Cloves Garlic Minced
1 Knob Ginger Finely Grated
1 Stick Lemongrass Finely Chopped
2 Birdseye Chillies Finely Chopped
175g Laksa Paste
400g Can Coconut Milk
2 tsp Fish Sauce
1 Lime
Garnish
150g Hokkien Noodles
80g Bean Sprouts
100g Prawn Tails
Fresh Coriander
Lime Wedges
Crispy Fried Shallots
Finely Sliced Red Chilli

Chilli Paste

Mix the Chilli Paste ingredients together

Chicken

Mix all chicken ingredients, apart from chicken, together and bring to boil

reduce heat and add the chicken then simmer for 10-15 minutes

remove from the heat and allow to cool in stock.

Slice or pull chicken. Reserve stock.

Laksa Broth

Heat oil in a large saucepan over medium low heat. Add garlic and ginger, sauté for 20 seconds, then add lemongrass and chillis. Cook for 1 minute.

Add laksa paste. Turn heat up to medium and cook for 2 minutes, stirring constantly, or until fragrant.

Add reserved chicken stock, coconut milk, fish sauce and some Chilli Paste to taste, Place lid on and simmer on for 10 minutes

Adjust to taste using lime juice and fish sauce

Warm noodles, then add prawns to soup for 2 minutes until cooked then add remaining ingredients and serve.
