Lamb Yellow Curry

Dice up lamb steaks into 2cm pieces. Chop off any excess fat. Heat a frypan and pour the oil in pan to heat up.

Add lamb to the pan while the oil is hot to brown it.

Add star anise, cardamom, cumin, coriander, and turmeric into the frying pan and mix.

Roughly chop the shallot and add this to the frying pan along with the whole garlic cloves.

Add tomato paste to the mixture and mix for 2 minutes so flavors start to caramelise.

Spoon in curry paste. Add 1/4 cup of water to deglaze the lamb while you prepare the rice.

In a small saucepan add 2 cups of water and the rice. Bring to the boil then reduce to low heat and cook for 15 minutes or until all water is absorbed.

Add the coconut cream and celery to the lamb mixture. Bring the curry to the boil, then reduce to low heat. Leave this cooking for 45 minutes to slow cook the lamb.

Add pineapple to the curry and mix.

Serve curry on top of rice.
