Ingredients

170gms Caster Sugar
112gms Butter – softened
170gms Self Raising Flour
1 tsp Baking Powder
Zest of 2 Lemons
2 Eggs
50ml Milk
Juice of 3 Lemons
300gms Granulated sugar

Place everything in a bowl and beat with spoon till smooth and incorporated. Place in 1pound Tala loaf tin and on a small Tala baking tray to make it easier to put in and out of the oven. Bake at 170C for 30 – 45mins. Cool for 5 mins before pouring over the below.

Mix together and let sit for 5mins, before mixing again and spooning or pouring over loaf while still in tin. Let sit in tin for 10mins before removing, slicing and enjoying. Serve with a dollop of lemon curd and a spoonful of whipped cream for a delicious dessert
