Ingredients

200g Fusilli or other short pasta
4 tbs Butter
1/4 Cup Flour
1 Bay Leaf
1 Pinch Nutmeg Freshly Grated
Salt and Pepper
2 1/2 Cups Sharp White Cheddar Cheese Grated
1 1/2 Cups Gruyere Cheese Grated
2 tsp Chipotle Chillies in Adobo Sauce
8 Bacon Rashers Cooked and Chopped
1/2 Cup Panko Bred Crumbs
1 Pinch Smoked Paprika

Bring a pot of salted water to a boil, add the pasta and cook until al dente.

Reserve 1 cup cooking water, then drain the pasta. Preheat the oven to 180c

Pan fry the bacon or grill until crispy, cool and chop.

Meanwhile, melt the butter in a large saucepan over medium heat. Whisk in the flour and cook, whisking, 2 minutes, then whisk in the milk.

Add the bay leaf, nutmeg and seasoning, then simmer, whisking occasionally, until thick, 8 minutes.

Remove the bay leaf and stir in 1 cup cheddar, gruyere and chipotle peppers.

Add in bacon and Stir in the pasta and the reserved cooking water to make a loose sauce.

Place the pasta mixture and top with the remaining 1/2 cup cheddar, panko and smoked paprika. Bake 15 minutes.
