Ingredients

APRICOT, BACON & SAGE STUFFING BALLS
1 MAGGI Apricot Chicken recipe base packet
200g Butter, melted
4 Streaky bacon rashers, diced
1 Onion , finely diced
1 Cup Dried apricots , finely chopped
2 tablespoons (if needed) Water
1, peeled, finely diced (tart is best – try Granny Smiths) Apple
220g Panko breadcrumbs
½ cup Milk
1 Egg, whisked
¼ cup Sage leaves, finely chopped
APRICOT & BRANDY GLAZED HAM
1 Whole cooked leg ham, bone in or out
Small handful whole cloves
1 MAGGI Apricot Chicken recipe base packet – only need to use ½ the packet
1 Cup Apricot jam
1/4 cup Brandy

APRICOT, BACON & SAGE STUFFING BALLS METHOD

Heat 1 Tbsp of the melted butter in a large frying pan on medium heat. Add bacon and cook for 3-4 minutes, until golden brown and starting to crisp. Add onion and apricots and cook for a further 2-3 minutes until soft, adding a little water if needed. Add the apple and cook for a further 1-2 minutes until apple is soft.

Place breadcrumbs in a large bowl. Add milk, egg, remaining melted butter, sage, MAGGI Apricot Chicken recipe base and bacon mixture. Mix until well combined then season well with freshly ground black pepper.

Preheat the oven to 180°C. Roll tablespoons of mixture into tight balls. Set aside in the fridge for about 15 minutes to firm up.

Place the balls on a lined baking tray and drizzle with olive oil and put in the oven for 20-25 minutes until stuffing balls are golden. Turn stuffing balls once during cooking.

Serve with roast chicken, Christmas ham, sides and gravy – try MAGGI Herb potatoes and kumara and MAGGI Roast Chicken Gravy (prepare as per the packet instructions)

APRICOT & BRANDY GLAZED HAM METHOD

Preheat oven to 180ºC. Remove skin from ham and use a sharp knife to lightly score diagonally both ways across the fat. Insert a clove in the centre of each diamond.

Mix MAGGI Apricot Chicken recipe base, brandy and apricot jam until smooth.

Place ham in a large baking dish and spread over the glaze. Bake for 50-60 minutes, brushing with glaze from the bottom of the roasting pan every 10 or so minutes. Best served at room temperature.
