Ingredients

450g Silken Tofu
100g Minced Pork
1/2 tsp Sesame Oil
2 tsp Doubanjiang Roughly Chopped (Chilli Bean Paste)
1 tsp Dou-Chi Roughly Chopped (Fermented Black Beans)
1 tsp Pepper Flakes
1/2 tsp Salt
1/2 tsp Sichuan Pepper Ground
1 tsp Soy Sauce
400ml Chicken Stock
2 Spring Onions White Part Finely Chopped
4 Spring Onions Green Part Finely Chopped
2 Cloves Garlic Finely Chopped
5 Slices Ginger Finely Minced
1 tsp Sugar
3 tsp Water
1 tsp Cornstarch
Cooked Rice To Serve

    Add a small pinch of salt and sesame oil to minced beef. Mix well and set aside.

    Mix cornstarch with water in a small bowl to make water starch.

    Cut tofu into square 2cm cubes

    Bring a large amount of water to a boil and then add a pinch of salt. Slide the tofu in and cook for 1 minute. Move out and drain.

    Get a wok and heat up some oil, fry the minced meat until crispy. Transfer out and leave the oil in.

    Fry doubanjiang for 1 minute over a low heat, then add garlic, white spring onion, ginger and fermented black beans to cook for 30 seconds until aroma.

    Then mix pepper flakes in.

    Add stock to the seasonings and bring to boil over high heat.

    Gently slide the tofu cubes. Add light soy sauce and mince.

    Simmer for 6-8 minutes.

    Then add chopped greens spring onions.

    Stir the water starch to thicken.

    Add the sugar to balance the heat.

    Transfer to serving bowls when almost all the seasonings stick to tofu cubes.

    Sprinkle Szechuan peppercorn powder and chopped spring onions, Serve immediately with steamed rice.
