Ingredients

1 tsp Vegetable Oil
1 tsp Butter
4 x 160g Salmon Fillets
Nori Crust
Salt
Rice To Serve

2 Nori Sheets Toasted
1 tsp Paprika
1 1/2 tsp Sesame Seeds
1 tsp Black Peppercorns
2 tsp Butter
1 Shallot Minced
1 Garlic Clove Minced
1 Thai Chilli Sliced
Salt
BBQ Sauce
1/3 Cup Ketchup
2 tsp Worcestershire Sauce
1 tsp Soy Sauce
1 tsp Mirin
1 tsp Sugar
1 tsp Dijon Mustard
1/4 tsp Garlic Powder

    Preheat oven to 180g

    Salmon

    Heat oil and butter in a sauté pan, season fillets with salt on all sides and sear the salmon on all sides until golden brown.

    Transfer salmon fillets to baking dish, skin side down and pat Nori Crust on top of fillets.

    Bake in oven for 5-7 minutes until cooked through.

    Crust

    In a mortar and pestle, break up nori sheets, Add paprika, sesame seeds, black peppercorns and salt, grind.

    In a small pan, melt butter over medium heat, Add shallots and garlic, and sauté over medium heat for 1 minute until shallots and garlic soften, add chili and nori spice mixture.

    Stir for 1-2 minutes to toast, remove from heat.

    Serve with some rice.

    BBQ Sauce

    Mix everything together in a small pot and bring to the boil and cook for 1 minute, cool and store in the fridge.
