4 Slices Bread
Soft Butter
3 Tsp Olive Oil
1 tsp White Wine Vinegar
Lemon Juice
2 Tomatoes
2 Chicken Breasts
1 Iceberg Lettuce Shredded
Parsley Chopped
4 Free Range Eggs Poached
4 Sliced Bacon
1 Small Round Brie Cheese
1 Red Onion Finely Chopped

Butter the bread, and toast on a griddle pan until charred.

Mix the oil and vinegar together add a squeeze of lemon and a pinch of salt to taste.

Cut the chicken breast in half, length ways, season and pan fry in olive oil a few minutes on both side until cooked.

Grill the bacon until crispy.

Mix the lettuce, onion and mayo together and season with a pinch of salt.

Slice the tomatoes and lay on top of the bread, season and drizzle with some vinaigrette, divide the salad mix on top then the bacon and chicken.

Slice the brie thinly and lay over the chicken so it melts and top with a poached egg.

Mix the chopped parsley into the remaining vinaigrette and spoon over the sandwich and serve.
