Pan Fried Pork Dumplings With A Spicy Dressing

Ingredients

400g Green Leafy Vegetable, Chinese cabbage or Bok Choy
500g Ground Pork
3/4 Cup Shaoxing Wine
3tsp Sesame Oil
1Tbsp Salt
3 Tbsp Soy Sauce
1/4 tsp White Pepper
2/3 Cup Water Plus More For Assembly
Dumpling Wrappers
Boiling Water
Dipping Sauce
4 Whole Hot Chinese Dried Red Peppers
2 tsp Sichuan Peppercorns
1/4 Cup Vegetable Oil
3 tsp Chinkiang Vinegar
2 tsp Soy Sauce
1 tsp Sugar
2 Cloves Garlic Chopped
1 tsp Toasted Sesame Seeds

Pan Fried Pork Dumplings With A Spicy Dressing

Steps

Done

Wash your vegetables thoroughly and blanch them in a pot of boiling water. Transfer them to an ice bath to cool. Ring out all the water from the vegetables and chop very finely.

In a large bowl, stir together the vegetable, meat, wine, oil, sesame oil, salt, soy sauce, white pepper, and ⅔ cup water. Mix for 6-8 minutes, until very well-combined.

Wrap the meat in dumpling wrappers and seal.

To pan-fry, heat 2 Tsp oil in a non-stick pan over medium high heat. Place the dumplings in the pan and allow to fry for 2 minutes.

Pour a thin layer of water into the pan, cover, and reduce heat to medium-low.

Allow dumplings to steam until the water has evaporated. Remove the cover, increase heat to medium-high and allow to fry for a few more minutes, until the bottoms of the dumplings are golden brown and crisp.

Dipping Sauce

Place chilies and Sichuan peppercorns in a dry frying pan and toast for 2-3 minutes.

Transfer to a mortar and pestle and crush. Transfer to a small saucepan and heat with the oil to infuse the flavour.

Combine sugar, vinegar, soy sauce, and garlic in a small bowl and stir until sugar is dissolved. Add chili oil mixture. Set aside until ready to use.
