Ingredients

1kg Chicken Thighs
3 Carrots Peeled
1 Leek Sliced
3 Spring Onions Sliced
6 Cloves Garlic
2 Onions Roughly Diced
6 Agria Potatoes Peeled and Cubed
2 Sprigs Thyme
1 Bay Leaf
1 tsp Flour
1L Beef Stock
2L Chicken Stock

Steps

Done

Brown the chicken off in a casserole pot until well coloured.

Add leeks and onions and sweat for 5 minutes, add garlic, thyme and bay leaf then stir through flour

Add the stocks and bring to the boil then add carrots and potatoes and simmer uncovered slowly for 1.5-2 hours until soft and tender.
