Pork Cashew Dumplings

Ingredients

1/2 cup cashews
3/4 cup pork mince
1/2 tsp fennel seeds
ground pepper
1/4 tsp Salt
tsp soy sauce
1 garlic cloves
1 small knob of ginger
12 pre-made dumpling pastry
1/4 cup water
1/3 cup sweet chinese vinegar
1 tbsp sweet soy sauce
1 1/2 tsp soy sauce
1 1/2 tsp chili oil
1 tbsp Sesame oil

Pork Cashew Dumplings

    Roughly chop cashew nuts with a large knife.

    Place pork mince, cashew nuts, salt pepper, fennel and soy sauce in a bowl.

    Grate ginger and garlic into the bowl and mix to combine.

    Layout dumpling pastry on a flat surface and place a spoonful of mixture in the center of each circle.

    Using the water, lightly brush the edges of the circle. Then fold the pastry in half and pinch at the top. bend the two ends in towards the mixture to ensure no mince falls out. Pinch all the edges and use some extra water to seal it tight.

    Place a medium pot of water on to a hot element to boil.

    Place a small saucepan on the heat. Add Chinese vinegar, soy sauce, sweet soy sauce and the leftovers of the ginger and garlic that couldn't be grated. Add chili oil and stir quickly till it comes to a boil then remove from heat.

    Once the water is boiling, add dumplings one by one. Each should take around 3 minutes to cook and then use a ladle or large spoon to fish them out.

    Once all dumplings have been cooked serve with the sauce on the side.
