Ingredients

2 Cloves Garlic Crushed
1 Long Red Chilli Deseeded and Finely Chopped
2 tsp Red Wine Vinegar
1 tsp Olive Oil
1 tsp Brown Sugar
1 tsp Ground Paprika
1 tsp Oregano Finely Chopped
1 tsp Sea Salt Flakes
1 Large Chicken Cut into Portions
1kg Baby Red Potatoes Halved

Combine the garlic, chilli, vinegar, oil, sugar, paprika, oregano and salt in a bowl.

Add the chicken and toss to combine. Cover with plastic wrap. Place in the fridge for 2 hours to marinate.

Preheat oven to 200C.

Place chicken in a roasting pan. Arrange potato and onion around chicken. Cook, turning occasionally, for 1 hour or until cooked through.
